Miso soup 味噌汁 is a warm and comfortingJapanese soup prepared with a soup stock called
Dashi and miso paste.
It is the soul food for the Japanese whichserve together with rice.
The video is about how to prepare the basicmiso soup with tofu, wakame, and scallion,
with little bites of tofu and seaweed in between.
Let me show you how to make it:To make miso soup, first we need to prepare
the dashi, that is the stock for the misosoup.
Clean the kombu.
It is a kind of dry edible kelp.
And this one looks very clean and I don'treally need to clean it.
Do not remove the white powder on the surface,as it is full of umami, that's full of flavor.
Cut it into short pieces.
Place it in a pot of water and soak it forat least three hours to extract its flavor.
If you have enough time, soak it overnightor up to a day will yield a better result.
I will keep it overnight and it will expand.
ring the water temperature up to nearly boil,and remove the kombu immediately.
After removing the kombu from the stock, heatup the stock to barely below boiling point.
Add the katsuobushi.
Let the katsuobushi steep for 5 minutes atthe sub-boiling point.
Alright, after 5 minutes.
Strain through a cheesecloth or kitchen tissueto remove all the katsuobushi.
The dashi is ready.
The next step is to add the miso paste.
You may not need all the dashi, so you cankeep some for other recipes.
For now, I'm measuring about 2 cups (500ml}to make 2 bowls of miso soup.
Bring the dashi to a boil.
Turn off the heat.
Put the miso paste in the miso strainer, lowerthe strainer into the dashi and gently stir
until it dissolves.
You may use any strainer if you do not havethe miso strainer.
It is important do not boil the miso as thecomponents which contribute to the aroma will
lose.
This is the wakame, the dry seaweed.
Sprinkle some wakame in cold water let itrehydrate for five to ten minutes or until
it expands.
OK it is now 5 minutes.
Take the wakame, pass through a strainer and gently squeeze the wakame to remove the
excess water.
Next, we cut some tofu.
Any tofu is suitable for making miso soup,but the silken or smooth tofu is my choice.
Cut the tofu into small cubesYou have to deal with it gently.
Prepare some cut scallions.
Gently place the tofu cubes into the misosoup.
Heat up the soup again just to the point thatthe tofu is heated through
Add the wakame.
Finally, add some cut scallion and sprinkleon the miso soup.
Remove from heat and serve.
