As part of the culinary culture of the islands, just about every part of the animal is used, so it's not strange to see chicken feet being used for souse (a spicy pickle), soups, stews and curries. Souse is basically a cold soup with spicy elements with a base of pork ears, snout and/or trotters, but for those of you who don't eat pork, chicken feet is a delicious alternative.
